Colada de coco manzana y almendras

Coconut, apple and almond colada

Recipe inspired by the original from Tree of Life Café

Ingredients

For two people

1/2 Pulp and water from a young coconut (if there isn't one, then from a mature one)

1/2 cup soaked almonds (or two tablespoons of almond butter)

1 small water apple

1/4 vanilla pod or a few drops of extract

Stevia to taste

Cinnamon and nutmeg to taste

Add water if needed or a little almond milk

Mix all ingredients in a high-speed blender (if you don't have a high-speed blender, you can also use a regular blender)

Sprinkle with a little cinnamon or if you like, you can add some chopped nuts and fruit such as blueberries, strawberries or raspberries.

It is an easy recipe for a quick breakfast that leaves you very satisfied.
